Whole30 Day 15: Halfway There

I can’t believe it’s already been 15 days! I started this journey thinking that 30 days was a LONG time. Now it seems like just the beginning. I’m not even really looking forward to it being over. I don’t feel deprived or that I’m missing out on anything food wise for the most part.

I slacked on blogging my weekend meals. Honestly the breakfast & lunch both days wasn’t very exciting. Saturday we grilled burgers & I had mine wrapped in a lettuce leaf & topped with avocado & a little Dijon. I also had sweet potatoes on the side (surprise surprise!). Sunday the in-laws came over & we all spent the day at the firing range. The weather here has been beautiful the past few days. We ended up grilling again Sunday & had steaks, asparagus & yellow squash. It was great because it was minimal mess in the kitchen!

Today was a little wonky for me. I ate a small pre-workout snack – half a serving each of leftover steak & almonds – and then we went for a run.

The run SUCKED. Sorry that there isn’t a nicer way to put it! It was horrible. My shins hurt, my legs hurt. It felt like I had cinder blocks on my feet & my knees didn’t want to bend. Despite all of that we did manage to go an extra half mile. Getting better!

I wasn’t in the mood for anything egg-y, so I reheated last nights leftovers for breakfast.

And then, I don’t know what happened to the rest of the day. I had plenty of time to eat lunch, but before I knew it, it was four o’ clock and I was starving. Not a good predicament to be in while grocery shopping! Luckily I found a Larabar that was only dates & nuts. That kept me from going crazy at the store & buying a bunch of junk!

Dinner was another throw & go bowl. I love just piling things together! I browned some lean ground beef with onions & peppers & some random seasonings. Then I had my first experience making zoodles. Who knew zucchini could be made into noodles?!? I have had a handy dandy julienne peeler in my utensil drawer for some time, but this was the first time I used it. So cool! I sautéed the zucchini lightly in some ghee. I piled the meat mixture on top of the zoodles in a bowl. Good stuff! It got 2 thumbs up from the hubby!

I have noticed a few things the last couple of days. With the exception of today, I haven’t really felt hungry. I haven’t been getting that rumbly feeling in my tummy. Also I’m finding that it’s taking less to fill me up, than in the first week. I am sticking to the meal map as close as possible, but there have been several meals lately where I just couldn’t finish it all.

Also I’ve just been feeling good in general. I don’t known if its the whole30, or the beautiful weather, or because my love has been home on vacation. But whatever it is, I LOVE it! I used to be tired & run down & just kinda felt blah more often than I should have. The last weeks, however, I’ve felt really great! It’s truly amazing what good clean food & consistent exercise can do for you!

Whole30 Day 12 ~ I’m Boring

I slacked off & didn’t post yesterday.  I didn’t even bother to take any pics of my food.  Everything I ate was boring lol. I just had random things that I had prepped, thrown together.  Today, I ate pretty boring too.  I definitely need to spend some time this weekend doing some menu planning.  I have tons of great looking Paleo meals pinned to my “Paleo” Pinterest board.  Time to dig in!

I didn’t run yesterday either & strange enough, I missed it! We ran this afternoon. The weather was beautiful & after we picked the kidlet up from school we headed out.  We had a great time & I actually ran more of the time than I ever have.  Not bad for only starting running last week.  Today I also agreed to do a race in October, back in my home town. Yikes! Luckily that gives me plenty of time to get better!

I had breakfast on the run today.  We had to get the kiddo into town to school & we were running a bit behind.  I threw some random things into a segmented container & ate in the car while hubby drove.  I had 2 hard boiled eggs, some almonds, some blackberries & some orange bell pepper strips.  Random, right?

Lunch was more randomness.  I was in a hurry & had a chopped up hard boiled egg with some salsa & massaged kale.  It didn’t taste bad, it just wasn’t really meal worthy.  I didn’t even bother to take a pic!

For dinner I made shrimp cooked in ghee & seasoned with salt, pepper, garlic powder & crushed red pepper flakes. It was good! We also had roasted cauliflower & broccoli.  Which is a fave of ours.  It was simple, fast & delish.  Good stuff!

Overall today was a good day, I’m feeling great, more energy & waking earlier.  And my hubby said he was proud of me for my running progress.  Happiness all around!

And yes, my kid is shirtless in the pic below.  He wore long sleeves to school & got hot running around on the trail lol. Sure is nice to be a kid!

Whole30 – Day 10: It’s Magic!

The magic is happening! At least I think it is. I have heard & read about the “magic” of  Whole30. Some of the benefits, or side effects, that I have been looking forward to most are better sleep, more energy, and waking before the alarm.

I started sleeping better immediately. Like by day 2 I was snoozing like a baby. I definitely had more energy yesterday (Tuesday). And then today, it happened. I woke up an HOUR before my alarm! Say what?!?! Actually I woke up 2 hours before my alarm, but mentally I just wasn’t ready for 5am lol!

Got up, got around, got my son around & had a little pre-workout snack before dropping the kiddo off at pre-k & heading out for a run. For my snack I had a hard boiled egg & some almonds.

And then it started raining – like monsoon raining. Well, that may be a bit of an exaggeration. We don’t have monsoons in Texas, but you get the point!

Instead of running we came home & I was going to do a workout DVD. I got side tracked & never got it done. Next thing I knew it was lunch time. I was starving since I didn’t ever eat a “real” breakfast. I had leftover spaghetti squash, a little ground beef/ground turkey mixture & some massaged kale. I also had some almonds for a bit of added fat to this meal.

And then it happened…I completely bonked at around 3:30pm. So tired I could barely keep my eyes open. I would have crawled in bed for the night if I wouldn’t have had so many things to do! I know it was because I missed having a real breakfast. I definitely learned my lesson.

I finally scraped together enough energy to make myself some dinner (the boys were gone). I had roasted sweet potatoes, ground turkey, onion, and green & orange bell pepper. All thrown in a big ol’ pile. The turkey was already cooked & the veggies already chopped from earlier meal prep. I tossed the onions & peppers in a pan with some coconut oil, added the turkey to heat it up & then added in the roasted sweet potatoes at the end. Seasoned it all up with salt, pepper, chili powder & smoked paprika. Yummy!

I’m super tired today & I know it’s because I missed a meal. So tomorrow I have to be diligent about getting it all in! Is it bad that it’s only 7:30pm & I’m considering going to bed? Hmmm, I don’t think so!

Whole30 – Day 9

Got a slow start to the day. I was up too late again. When hubby’s schedule changes, my sleep schedule changes too. It can be tough trying to be on his night time schedule & my son’s day time schedule. Still adjusting!

Once I finally got going today, I felt great! Took G to pre-school, came home, made breakfast, answered some emails & did some work. I was clear headed & focused. Two words that have never been used to describe me in the mornings!

I wasn’t very hungry. I had hard boiled egg mixed with mashed avocado & some berries on the side. The egg/avocado mix isn’t much to look at, but it was very tasty!

My husband surprised me & took off work tonight. He starts vacation tomorrow (technically), but we’ve been missing him terribly! He was able to take off an extra day. I was very excited. It was completely unexpected!

We had lunch & then went for a run before we picked G up from school.
Today’s lunch was massaged kale, ground beef & a few mini pepper slices thrown on top.

My husband talked me into joining him for his back & biceps workout when we got back home. I haven’t lifted weighs in quite a while. I am going to be crazy sore tomorrow, I’m sure! But it’s always fun doing stuff together.

Tonight’s dinner was dinner was spaghetti & meatballs – using spaghetti squash of coarse! I made my own sauce with canned crushed tomatoes (with no sugar) & added garlic & some dried Italian seasoning until it tasted good. I also heated up some of the meat balls I made during meal prep in the sauce. This one only gets 2 stars from me. I love spaghetti squash, but the meatballs didn’t make me very happy. I used a random recipe from Pinterest & they just weren’t very good. I should have just stuck to the way I always make them. The seasonings just weren’t right for me. Hubby loved it and had two bowls!

My meals have been pretty basic so far. I’ve really just been trying to focus on making sure I’m following the meal map outlined in the program & that everything is Whole30 compliant. Maybe next week I will get a little more adventurous with my food choices. But then again, maybe not lol!

Hopefully I can walk tomorrow & use my arms after today’s workouts!

Whole30 – Day 8

I can’t believe I have an entire week of Whole30 under my belt! Only 3 weeks to go. Today I really didn’t want to get up and around. I stayed up way to late last night and hit snooze a few too many times this morning. I had even talked myself into taking a nap after I got my son off to pre-school.

And then, the magic happened! I got up & started getting ready and had this sudden surge of energy. I felt GREAT! Even though I hadn’t gotten many hours of sleep, I felt really good – clear headed, calm, and totally ready for the day. Which is good because my to-do list was a mile long today.

Another thing I noticed today was that my skin so clearer & brighter. Totally wasn’t expecting that, but I’ll take it. I’m really looking forward to seeing what else improves over the remaining 3 weeks. I definitely need improvement in the sleep department. I’m one of those perpetually tired people who ,no matter how many hours of sleep I get, needs a nap.

I am missing my chocolate Shakeology for breakfast. I love love love it. And I love knowing that I’m getting superior nutrition when I drink it. BUT I will not compromise my Whole30 journey. It will waiting for me on day 31!

Today’s meals I had the following:
Meal 1 – leftover grilled pork chop, massaged kale & roasted sweet potatoes. It took about 1 minutes to put together, which I LOVE!

Meal 2 – My new fave, hamburger salad. So good. I could have it every day. I threw in my other fave, roasted sweet potatoes & it was amazing!

No workouts today, but feeling great overall. I hope this energy increase continues.
